The strawberry purée can be replaced with frozen or fresh strawberries. However, be aware the color might be different and the sweetness will depend on the ripeness of the strawberries.
Make sure to check your ice cream machine’s instructions before starting this recipe! Also, if you don’t have an ice cream machine, you can place it in the freezer and wait until it’s frozen. Your sorbet won't probably have the same texture, but it should work just fine!
Add 125 g of sugar, 50 g of glucose powder, and 4 g of sorbet stabilizer to a bowl. Whisk to combine
Add 262 g of water and 20 g of trimoline to a saucepan over low heat. Stir until completely dissolved
Let it cook, stirring constantly, until it reaches 40 °C
Add the previously mixed dry ingredients and whisk to combine
Let it cook until it reaches 85 °C and remove from heat
Transfer the hot mixture to a bowl and place it in the refrigerator for 4h to 12h to mature it
Add 300 g of puréed strawberries and 200 g of fresh strawberries to the matured mixture
Add 35 g of lime juice and 1 tbsp of lime zests
Blend everything together using a hand blender until homogenous
Transfer the mixture to an ice cream machine and let it churn for 15-20m until it has thickened. The strawberry lime sorbet is ready
