This simple dish of sardines with garlic and coriander is bright, rich and savory. It can be made in a hurry and served as an appetizer, snack or on toast.
Sardines are a nutrient-rich oily fish that are found and used throughout the world. They are often preserved before eating.
Chop the stems from ยผ bunch of coriander
Pick the cilantro leaves and chop the remaining stems
Smash 1 clove of garlic and peel
Cut parchment paper into a round and place in a frying pan
Add 1 tbsp of extra virgin olive oil to the pan
Spread the olive oil around the parchment paper
Add the sardines from 1 tin to the pan on medium heat
Add the coriander stems and the garlic
Flip the sardines once they are slightly toasted on the bottom
Add 1 tbsp of white wine to the pan
Transfer the sardines to a plate once they are warmed through
Remove the parchment paper from the pan. Drizzle the remaining oil over the sardines
The sardines with garlic and coriander are ready to be enjoyed!
