
Layered Cheese Crêpe with Walnuts

Savory crêpes layered with garlic and cheese, and finished with walnuts!
This a simple and delicious recipe to cook at home and share with your family.
It can be served on its own as a snack or turned into a full meal when paired with a salad or grilled vegetables!
The feta cheese can be replaced with another white cheese, and the hard goat cheese used here is kashkaval cheese but it can also be replaced with another goat or yellow cheese, such as Swiss cheese.
Add 500 g of all-purpose flour to a bowl
Add 1.2 l of whole milk. Whisk continuously to incorporate the flour
Add 1 egg
Add 1 tsp of salt and 1 pinch of baking soda. Whisk thoroughly to obtain a thin, smooth batter
Let the batter rest for 20m until it starts to bubble
Peel and roughly chop 4 garlic cloves
Grate 200 g of feta cheese over a plate
Add the chopped garlic to the grated feta cheese and mix well
Grate 100 g of hard goat cheese over another plate
Preheat the oven to 170 °C
Warm a flat non-stick pan over medium heat and grease it with butter
Add enough batter to form a thin layer. Lift the pan off the heat, tilting it in a circular motion to spread the batter into an even circle. Cook for 1m until the top is set and the bottom is light brown
Loosen the edges with a spatula and flip the dough. Cook for 30s and remove from the heat. Repeat with the remaining batter, greasing the pan again if it starts to stick. The crêpe is ready
Drizzle melted butter as needed over a large heat-proof plate or baking dish. Place 1 crêpe on top of it
Sprinkle some of the feta cheese and garlic mix over the crêpe
Drizzle with melted butter and cover with another crêpe
Sprinkle some of the feta cheese and garlic mix over the crêpe
Drizzle with more melted butter and cover with another crêpe
Sprinkle some of the feta cheese and garlic mix over the crêpe. Repeat this process of layering until there is only one crêpe left
Place the last crêpe on top and drizzle it with melted butter
Cut the layered crêpe into 8 equal parts
Drizzle the crêpe pieces with melted butter
Top with a generous layer of the grated hard goat cheese
Sprinkle chopped walnuts to taste on top and drizzle with more melted butter
Place the layered crêpe in the preheated oven. Bake for 10m until golden brown and crispy on the edges. The layered cheese crêpe with walnuts is ready
