The comforting smell it brings to the environment would be wonderful by itself, but this granola is still super versatile, easy to make, and capable of making any bowl of fruit and yogurt look like a Sunday brunch. Perfect to make you stop buying it ready to eat and to always have something tasty to add to your daily food.
All the nuts and dried fruit chosen for this recipe are part of my favorite version of granola, but you can replace them with whatever you prefer. Sour fruits like apricot, cupuaçu, and dried blueberries are perfect replacements for the cranberry, but raisins work just as well. The cocoa is optional, the molasses can be honey, and you can also remove the coconut if you don't like it.
As you can see, the cool thing is to create! Try also putting cashew nuts instead of pistachios, it's amazing!
The only inspiration for this recipe was my stomach and my constant desire to eat yogurt with granola in the mornings.
I tested several variations until I came up with this one, which has become my favorite: it's chunky, crunchy, has depth of flavor, and goes with almost any fruit.
Ingredients
Pistachio
1¼ cupsAlmond
¾ cupMolasses
⅔ cupMelted Coconut Oil
¼ cupCocoa Powder
2½tbspRolled Oats
3½ cupsPumpkin Seed
⅓ cupRaw Coconut Chips
1¼ cupsDried Cranberries
1¼ cupsSalt

Add ¼cup of coconut oil and 2/3cups of molasses to a large bowl
Add 2½tbsp of cocoa powder and 1tsp of salt
Whisk until you obtain an homogeneous mixture
Add 3½cups of rolled oats to a large bowl
Add ¾cup of almonds cut in halves, 1¼cups of pistachios, and ⅓cup of pumpkin seeds
Mix the dry ingredients
Add the liquids to the dry ingredients. Mix until well combined
Spread a thin layer of the mixture over a silicone baking sheet or a good quality parchment paper set on a baking tray. If the baking tray is too short, divide the mixture in two parts
Bake at 150°C for 35m until caramelized
Spread 1¼cups of raw coconuts chips on a baking tray
Bake the coconut chips at 150°C for 3m or until light brown
Remove the granola from the oven and add 1¼cups of dried cranberries
Remove the coconut chips from the oven and let them cool down
Mix the granola with the coconut chips. The granola is ready
Let it cool down and reserve in hermetic jars or resealable bags to maintain the crunchiness for weeks. Enjoy!
