A very common side-dish to various Brazilian meals that has the versatility of absorbing most of the other ingredients. In this case, the cashew nut is the highlight that brings a lot of texture.
This Cashew Nut Farofa is perfect for pairing with meats, cooked beans, or even putting it on top of some rice as it is so delicious.
The cashew nuts can be replaced with almonds, walnuts, pumpkin seeds seeds, or any kind of nut you can think of! The fresh coriander seeds can also be replaced with other herbs, such as thyme.
Place a skillet stove over medium-high heat, and let it heat completely
Add 300 g of unsalted butter and let it melt
Add 300 g of toasted cashew nuts and mix it
Add fresh coriander seeds to taste
Add the juice of 1 rangpur lime and mix it
Gradually add 500 g of cassava flour, and mix until everything is combined. Let it toast a bit until it is fragrant and slightly crunchy. The cashew nut farofa is ready
